I know this is probably really simple, but I can't figure out how to do it....

When you have named a surface in modeler in the surface editor, then you decide to delete the item or change the surface, how do you delete the surface names you don't need ??

There is no way to manually delete surface names. The unused surface names will stay there until you close your object and reload it. When you reload it they won't be there anymore if those surface names aren't assigned to a surface.

Closing the file or modeler then reloading the file will remove the unused surface names.

No. Just close the object and reopen. If you are working between Layout and Modeler, in Layout you can use the replace object command (on the same object) to get rid of the surfaces there.
