I was wondering if anyone had some experience with fish, mostly the swimming part. Also water. Trying to simulate this inside Lightwave.

Here is my inspiration.

Well, the modeling part ain't tto difficult once you have some decent photo's of the fish.
As for the swimming part, that shouldn't be too dificult either once figure out how a fish swims (see attached fish anatomy)
http://www.akca.org/kht/anatomy.pdf

Basically (not going into details) a fish's swimming muscle system consists of 4 large myotomes or muscle groups that run along the fishes entire body (you check this by buying a fish and scraping away the skin, informative and makes for a nice evening meal aswell) these contract on one side of the fish and expand on the other to give the sine wave like motion a fish makes to propel itself forward.
Once you've figure that out you can create a somewhat simple setup using a couple of bones, create a complete swim motion loop and connect that using Cycler (see Protons exelltn tutorial on this forum too see how)

As for the water, you can do that using say Cloth and simplified collision objects attached to the fish to create the water ripples (there are tutorials applenty on this subject, just do a search), the water caustics can be faked (again do a search) or by simply rendering the actual caustics with the LW render engine (again, search the forum)
