Not a video but I highly Recommend Timothy Albee's book on Character Animation.

Could you list for us those 12 fundamentals?

The video starts out by showing a finished rig. It then starts with the feet and wroks up to the head and describes what a good rig should be able to do. These 12 principles would be the same in any 3d application. Once each of those principles is covered the video then goes into how to technically make it happen. :)
