Is it possible to "wipe" on a single object within a scene using a null to guide the rate and position of the opacity plane.

Try using a clip map to affect the object's opacity. Take a look at this tutorial:

The essential concept is that the position of the clipmap is determined by a null using 'reference object' in the clip map's texture editor.

If you want to dissolve whole object gradually, use the dissolve envelope ("E" under object dissolve in render tab of properties) instead - you could drive the dissolve using proximity to your null.
