I printed out this tut on converting a disc to a 4 side poly but now I can't remember how to divide the n-gon once it's been beveled. How do I get from pic 1 to pic 2?

Hmmm. I kind of like how that is divided. I suppose you could use add edges to get that effect.
If you want a quick way, you can use the size tool, extender plus tool and make pole tool. This will create trigons and a center point. Its not what you were looking for but it is quick and works for sub patching.

Could you not just select points and make 4 sided polys then split the center?

edge extend or bevel a tiny increment. set value on the appropriate axis, merge points, delete squashed poly. call it a day.

That's the one I was looking for! It's hard to visualize "Set Value" working right on a circle, but it does. (The second bevel can have zero inset)
