does anyone have any suggestions or tutorials. I'm looking to make skin on a large animal that jiggles somewhat.

You might consider using an object texture displacement set to a very small value of change. This displacement could be animated with envelopes or by using nulls as controls.

You could paint weight maps on the different flabby parts of your creature. I did this with an Apatosaurus that I have animated. Then, you can use SoftFX to add the jiggle dynamically. This may take a bit of tweaking to get right. Sometimes it's easier and just as effective to make morphs and control them by keyframing.

Theres bones, endomorphs, softfx or clothfx. You can also use the bone dynamics in IKBooster. :)
