Trying to learn UV mapping for some simple game environment object mapping, but the UV map is distorted and squeezed up (I'm using 7.5c). How do I get an accurately proportional UV map from an object without the distortion?

For a start, get yourself the free TextureGuide2 plugin from Flay.com
I also recommend the UV to Morph/Morph to UV paired plugins. With these you can translate your UV map to real geometry and fiddle with it in 3D space, then return it tro UV space when satisfied with it.
