If you want to get a realy smooth result you can always use

a subpatch object

First creat a disk then use the bevel tool holding down ctrl

Bevel the circle inwards and then delete the centre polygon

then press tab to turn it into a subpatch

and then all you have to do is to use the size strectch tool

I sugest to first use the the size stretch on the whole object

and then adjust the centre points

once you have your object in layout you can increase the
detail in the object properties panel setting the render subpatch
division level higher

You can always use the cone tool then merge the tris into quads and delete the base polygon. It's pretty much then same thing you suggest but all the centre points are merged.

It's a pity that someone can't make the "lost in time" center triple plugin saving alot of modelling time for this technique.

Also, there's a plugin called converge points, which is useful for aligning points for stuff like this.
