Haver checked the 256 other threads doing with mirroring and found nothing. So.......

Is there a way to mirror UVs???
If I mirror the model the UV stay on the original side.

And if not, shouldn't this be a basic operation of LW seeing as you can mirror everything else???

I don't know if you are modeling a character or what but here is how I would go about doing it with a human head.

1. Here is the starting point. Half of a head that is uv mapped.

2. Now copy the half head into a new layer.

3. Now switch to the Map menu and choose Flip UV Point Map. Because I will be Mirroring along the X Axis I will choose to flip it using U.

4. In the final phase of this I will then select the UV Map on the new mirrored half of the head and use the move tool to move the map into the correct mirrored position. Now just copy this half into the layer with the original half and merge the points.

I didn't have that in my tools so had to reset the menus.
