Does anyone know how to get the new Shadow Catcher in LW 2018 to have a plain object just show a shadow from an object sitting on it, be transparent and not have the environment image displayed on it?

You could try turning off Global Illumination in the Render Properties=>Global Illumination panel, or uncheck the "Sample Backdrop" button.

Neither of those work. I'd like the plain to become transparent and only show the shadow, like the old node did in LW 2015 for example.

I am confused by your question.

2018 and 2015 seem to work similar.

mmm the material node in 2015.3 did not have any transparency settings.

Now Denis did have a Shadows plugin inside of DPKit, http://dpont.pagesperso-orange.fr/plugins/nodes/Additionnal_Nodes_2.html

This is 2015.3 nodal version of shadow catcher. If I hear what your saying then the torus below the plane should be visible. As you can see there are no options for transparency in the Material. Again wondering if you are thinking of the Shadows plugin from DPKit. It is not a material so you can plug it into and channel.
