Matt kindly uploaded some sample files for creating dielectric surface.

Had a crack at the orange bowl. Without matching the lighting exactly, clearly it will be somewhat different than the photo. But I have to get on. Hope it helps a little.

It has been very helpful in my quest to understand how to use it properly.

One thing I don't understand is no matter how much I play aroud with the colour I can only produce primary strong colours.

Is there a reason for this?

I'd guess you're changing the color in the main Surface Editor panel, which won't change the Dielectric color. If you bring up the Surface Editor (F5), select the Bowl surface, click on "Edit Nodes", and double-click on the Dielectric node, you can change the color and absorption to anything you want. A lower absorption value will make the dielectric material more clear and less colored.
