if a video card has 3 output jacks(HDMI, DVI and S-Video) can you connect 3 monitors with it? or do video cards only support 2 monitors at a time? i'm thinking having modeler in one monitor, layout in one and the preview window in the third monitor. my motherboard doesn't have dual pci-e support so i can only use 1 video card.

It depends on the specific card I think, more modern cards support more displays.
Try searching online for the make/model of video card for specs maybe.
Or look in your hardware setup, the same way it will list which ram slots are used, it should list input 1 - monitor...., input 2 etc, see if there are three inputs!

Depends on the video card. I have a 3gb 680 GTX running 3 monitors. 2 on the DVI and the third on the mini-displayport. The center screen is 2560x1440 and the 2 sides are 1680x1050. Have had no problems at all.
