I submitted a fogbugz report about Surface names in the Poly Stats window, here's the reply:

Not a bug, as they 'still exist'

You'll also find other areas that just having a 'hidden layer' in Modeler is treated in Layout as being there.. but not there.

It's a necessary evil for that use - if you want them to be "gone" total - then make a new object without those layers.

Fair enough, but FWIW, i think a new feature would be helpful here: if a user is using HIDING to cut down on the 'noise', s/he might appreciate a shorter list of Surfaces in the Poly Stats window to sort thru.

I suggest that VISIBLE Poly surfaces be at the top of the list, with their VISIBLE and TOTAL count, while Surfaces that are entirely Hidden be listed below, and ghosted.

So, a Surfaced dropdown list for a layer with Hidden polys might look a bit like:
