Setting the pitch in modeler is confusing.

Here's my question... The model i'm rigging has it's arms out in a T' square. What direction should the pitch be?

The handles on skeles define the bank 0 direction... which is the plane of the pitch.

For arms (or shoulder joint more specifically)... pitch should lie on the arms XZ plane... which is much what your screen shot presently shows.

So a simple way of looking at it is... you want the fingers to fold in a fist, than the pitch should be up. Or you want the arm to fold(T square pose) the pitch should be to the back?

This maybe some simple stuff, but is there a tutorial on this?

You want different alignments on different joints to allow for LWs rotation order, so as to give yourself preferred axis that avoid gimbal lock...
