Alt-f1, modeler.
Dunno for layout, right off the bat.
Edit: JonW is right, and its for both.

Easier to remember is to hit d on your keyboard in Modeler or Layout and look for "Hide Toolbar".

If you ever screw up your interface and can't remember how to get them back, you can always delete your config files.

Eek, that's a bit extreme!, I'd stick with 'd' and then set things up there. Alas, deleting the configs means you then have to set everything back up including your plugins.

That said, there are times when this is the ONLY answer to a problem. Thankfully I've not needed to do that in a while, (uh-oh, kiss of death right there! :p ).

I'll accept that as an alternative to hurling the keyboard at the wall. (just because I haven't done that in years doesn't mean it couldn't happen!)

I put my foot through a door in frustration recently, does that count? :p
