Catmull Clarke at a level of 3 (default) turns into 768 polys at rendertime.

That's how subpatches work. Each subpatch is divided into numerous polygons based on the subdivision level you have set.

In your case each polygon is being split into an 8x8 grid of polygons. Those polygons in turn are dived in half to make triangles or "tripled".

So it works out like this:

You started off with 6 subpatches. Each of those were divided into 8x8 grids.

An 8x8 grid is 64 polygons. So each subpatch = 64

Since you have 6 subpatches that number becomes 6 x 64 = 384.

After that each of those smaller polygons is tripled to help them be planar resulting in 384 x 2 = 768.

So 6 subpatches at your level of subdivision results in 768 polygons.
