Is it those gases that if they go THAT high in the atmosphere, that they start to freeze, thus we see them turning whitish like that?

No thats the shockwave... caused by the air being compressed as it cant move out the way of the rising explosion fast enough. Same as the lil spherical clouds u see forming on the noses of fighter jets going supersonic.
