Capture troubles

When trying to capture in Y/C I get a poor image- negative looking
muted colors...........

When switched to composite the image is fine.

I tried new BNC to S-video adapters changed out the toaster input cables.

Is my toaster card damaged? Is there a system reset via software that will help fix the trouble?

Can the Y/C input be damaged and the composite be OK?

Have you changed the Preference setting from Component input to Y/C?

yes we did this several times to no avail

If your video out works fine try switching the in cable for the out cable, just to see if it's cable related.
