where is the option to set the angle of smooth shade?
this is the sphere that IS NOT a sphere :(

surface editor.. what angle should i use?
and in modeler how many SIDE and SEGMENT should have a sphere to be a sphere?
Depends what your going to do. The default setting for the sphere should give you an okay ball. If you want it to be perfectly smooth maybe create a Tesselated (spelling??) Sphere and Patch it.
As far as smooth angle goes, it's generally a matter of trial and error and also depends on what other objects might share the same surface.

when you make you ball, press n to get the Numeric panel, make more sides or segments, then check smooth on the surface panel.
thats it.
also Tab will change it into Sub Divisions, just so you know, but probably not what you need now.

For the smooth angle, if it is just a sphere you are trying to model, you can leave it to the default (89.5, I think). It is way too high, but that is not a problem in itself.
If the borders of your sphere are not smooth enough, you should increase the number of polys. For that, use subdivide with any option but faceted (which would subdivide your mesh without smoothing it).
