From what I've seen, these appear to be very similar versions of a similar application - but I'll admit, I've seen very little. Can someone let me know, if we were to purchase a VT system, is VT-Edit what will be included, or would Speededit become the included application? And what is the difference between the two tools aside from VT inclusion?

If you purchase VT5 , it will come with the same Speed Edit within it as if you bought the stand alone version.
No difference between the 2.
As far as I can tell from the pre-lit the biggest new inclusuion (and it's a biggy) between SE and the old VT-Edit is the ability to do HD editing in SE. Frame and Rez independant. But as for exactly what kind of HD and how it will all be handled hasn't been pointed out exactly yet.
VT-Edit is the name of the editor in VT[4]. SpeedEdit is the editor in VT[5].
VT[5] is not out yet, but if you purchase VT[4] now you will get vt[5] when it ships.
Like any software, SpeedEdit is an upgrade from its predicessor, and they are also changing the name. Check out the products section of this web site for more official info on what SpeedEDit will include.
For the first time, Newtek will offer the editing program, SpeedEdit (previously called VT-edit) as a stand-alone program. Presumably you will have to find you own way to get video/audio into the computer (aka firewire) and you will give up live switching capabilites, 2d and 3d animation capabilites but you will still have all the features found in VT-Edit + whatever else is added to the new version.

SpeedEDIT-VT is the VT[5] approach. SpeedEDIT would presumably not work with a VT card even if there is already one in there. By that I mean it isn't appropriate to expect to upgrade VT[4] ver 4.6 or earlier by just buying SpeedEDIT (not that the price might be all that different but LW9 would be omitted).
VT[5] - it is a bit early to say what it will be in it's entirety and whether it is the go-to environment with SpeedEDIT being it's lighter alternative. SpeedEDIT doesn't look like it will be a suite. VT[5] doesn't look like it will have an HD I/O capability (maybe output via your graphics card and multichannel audio card or VT-audio), not for a while anyway.
It is the youngsters that are getting married first with the release of SpeedEDIT. The elders are getting their vows renewed shortly after when VT[5] waddles back up the aisle! VT[5] will be carrying a bit more and be a bit more jowely but the heart will have been transplanted with that of one the age of the same youngsters. So expect some stunts at the reception from all of them!

As i see it Newtek should give the 8-input SDI switcher 2 new letters in front.. HD-SDI :-) We passed SDI, now Europe is looking at HD input for future investments.
