I'm trying to make an HD product for a client. I can use my Sony FX1 HDV camera as a source to digitize 1080i HDV footage onto VT5 Speed Edit and edit away... but, then what? What format do I render to move the edited file in order to burn a DVD, or otherwise display the finished output in true HD?

I would render out your finished project to HD SpeedHQ project size...then start a new project at DV NTSC 4:3, import the clips and re-ender out the project to SpeedHQ Project size. These clips should load into any DVD burning software for oldschool non HD DVD's.

I agree with Shawn except I'd say make it 16:9 instead, to ensure you keep the aspect ratio intact.

For an HD DVD, you'll need a Blu-Ray burner, and HD burning software like TMPG. Render up the final project in HDV, or use one of the BlueRay presets under ".wmv".

Or for other devices, use whatever settings and codecs your HD media player uses.
