How to Segment into Smaller Vids

Greetings. I taped an interview of a doctor who wants it chopped into smaller videos according to topic with intro music for each. What is the easiest way to do this? Should I chop and then create sub projects?

Edit all of the interview in one main project.
Create a new project with just Intro titles and music.
Go back to main project and create sub projects for each segment.
Place the first appropriate sub project into the title/music project and save as TopicOne.
Repeat process for each topic
