Total n00b question coming up folks. I have an X shape and I want to round all the sharp corners and edges on it. I assume I use the Bevel tool to create the geometry for the corners and edges but obviously when I subpatch it doesn't like the polygons that make up the X faces.

How would I go about creating this shape with completely rounded corners on all the edges?

Have you had a look at using Rounder? Not sure where it is in the default menu layout, but use Menu Layout under Edit to find where it is.

No problem :D

Bear in mind Rounder likes to work with very clean quad meshes, so if you start hitting the notorious panicky Rounder error warning (Modeler is not about to crash by the way, so don't panic!), take a closer look at your base mesh for possible cleanup you may need to do.

There is also a really good Rounder tutorial video somewhere on the web - search for it - it's worth a look.
